I offended my girlfriend's Christian parents. How do I fix this?

You certainly over did it. You need to watch what you say, because sometimes jokes can offend people depending on how you say them. Also talking about Jesus Christ the way you did is not funny at all. I think you should apologize to the girl and her parents, and if they don't accept the apology, give them some time until they kool off about the situation.
